As a trainer, people always ask about diet and what I think they should be eating to stay healthy and fit. I believe in balance but I also believe you need to listen to your body and go with what works best for you and your goals.
I personally stick to a gluten-free diet that focuses on protein and vegetables. I find that eliminating gluten improves my skin, energy levels, and overall well-being.
And with all the amazing gluten-free food options available, I don't feel like I am making a huge sacrifice. I still enjoy the foods I love such as tacos, sandwiches, etc.
Whether you're gluten-free or simply trying to eat healthier, the two recipes below are full of flavor, packed with nutrients and easy to whip up.
Spaghetti Squash Turkey Taco Boats
I have recently been making Spaghetti Squash Turkey Taco Boats! I love this recipe because the spaghetti squash adds a lot of fiber, which helps keep me full. In addition to turkey, I also add lettuce, vegan cheese, and guacamole for extra flavor.

Crockpot Chicken Fajitas
I love this crockpot recipe for chicken fajitas! It’s easy to prepare and I don't have to worry about cooking after a long, busy day. I like to put my chicken and fajita veggies over a salad and top it with guacamole, pico de gallo, and vegan cheese. If I am craving some kind of starch, I'll use gluten-free tortillas or chips to dip into the guacamole.

Bonus gluten-free snack ideas
It isn't always easy to eat healthy on the go, especially when you're following a gluten-free diet. I typically prepare my own snacks so that I have healthy options on hand.
When I need something hearty, my go-to's are hard-boiled eggs and avocados! The combination of protein, heart healthy fats and fiber is perfect for when I'm traveling or too busy and can't sit down to a meal.
When I'm craving a savory snack, I'll opt for all-natural raw almonds. The healthy fat fills me up in-between meals.
When I'm craving something sweet, I'll have a FitJoy bar! I love the Cookies & Cream Protein bars. They’re delicious and a healthy way to satisfy those chocolate cravings!
