Blueberry Brie Pecan Salad with Protein Puff Croutons

Oh hi, I'm just eating this Blueberry Brie Pecan Salad by the bowlful. Every day. If you need a quick and easy side dish to throw together, I'm soo HERE for you! This is the opposite of a boring salad. 

This particular salad is flavorful, sweet, and seasonal to the point where you'll find yourself even craving it in the middle of winter–that's a promise. I can't believe I have taken this long to post it as it's one of my most made salads. This particular version is kicked up a notch with FitJoy's protein puffs added as "croutons!"

I'm so excited to have discovered FitJoy products! Their crunchy protein puffs are super addictive and I've been eating them like it's my job. They come in Honey Sriracha, White Cheddar, and Nacho Cheese flavors. They're grain-free, keto-friendly/low carb, and high protein. I think next time I will try their protein puffs on top of this Mexican Fiesta Chicken Salad or my Avocado Chicken Salad

When the weather is warm I get really into cold salads that can be made and enjoyed casually. Like, even if they are a bit trashed up (hello), they still last a day or so in the fridge and they aren't overwhelmingly high-maintenance. You can even add meat to this salad to make it more of a filling meal! 

Last summer, fall, and winter, I had to be off dairy due to Eliza's dairy and soy allergy and it was a huge struggle. I have never appreciated cheese more than I do now! This is why I needed to add brie cheese to this salad.

My Blueberry-Brie Pecan Salad is great for lunch but fantastic for a cookout too! You may find yourself eating the leftovers straight out of the fridge, FYI. This is pretty much the base, super easy, serve-as-a-side salad in our house. 

You will die when you taste this. Not really die, but die of happiness because it's so good and the flavor combination combined with the crunchy protein puffs is where it's at. It is a satisfying salad and filling enough to be your lunch or dinner dish.

Blueberry-Brie Pecan Salad with Protein Puff Croutons

This is an easy salad recipe: Blueberry-Brie Pecan Salad with Protein Puff Croutons. The protein puffs and candied pecans add so much crunch and flavor!

  • 1 bag of arugula
  • 1 pint blueberries
  • 5 ounces brie cheese, cut into small pieces
  • ⅓ cup candied pecans
  • FitJoy Protein Puffs (for croutons, flavor of choice)
  • Lemon, Honey & Thyme Vinaigrette {see recipe below}


  • ½ cup olive oil
  • ¼ cup fresh lemon juice
  • 3 tablespoons honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon thyme



  1. Whisk all ingredients together in a small mixing bowl. Set aside until ready to use.

Salad: In a large salad bowl

  1. Add blueberries, brie and candied pecans to arugula and toss to combine.
  2. Sprinkle FitJoy protein puff croutons over top of bowl, toss salad mix with vinaigrette to taste until lightly dressed. Enjoy!
